A paper-thin fermented rice-and-lentil crepe from South India/World Cuisines

Dosa is a thin, crispy crepe made from a fermented batter of rice and black lentils. It is a breakfast staple across southern India and Sri Lanka. A masala dosa is rolled around a filling of spiced potatoes. The batter must ferment for 8 to 12 hours to develop its characteristic tang.
