A single thread of saffron, the dried stigma of the Crocus sativus flower, weighs about 2 milligrams and is roughly 3 cm long. It takes about 150,000 flowers to produce one kilogram of saffron, which is why it retails for $5,000-$10,000 per kg. Each crocus produces only three stigmas, and they must all be harvested by hand.
