The jalapeno (Capsicum annuum) is the most popular chili pepper in the United States and Mexico, named after the city of Xalapa (Jalapa) in Veracruz, Mexico. It measures 2,500 to 8,000 Scoville heat units, placing it in the medium range of pepper heat. The 'heat' comes from capsaicin, concentrated in the white inner membranes (placenta) rather than the seeds as commonly believed. Jalapenos are one of the few peppers that are commonly eaten at all stages of ripeness, from green to fully red. When smoke-dried, jalapenos become chipotles. A single plant can produce 25 to 35 peppers per growing season.
