Dragon fruit, or pitaya, is the fruit of several cactus species in the genus Hylocereus and Selenicereus. Native to Central America, it is now widely cultivated in Southeast Asia and has become a symbol of Vietnamese agriculture. The fruit has a striking appearance: bright pink or yellow skin with green-tipped scales and white or magenta flesh dotted with thousands of tiny black seeds. Dragon fruit cacti are night-blooming, with large, fragrant white flowers that open for just one night and are pollinated by moths and bats. The flowers can be up to 30 cm long, making them among the largest in the cactus family.
